1 C cooked couscous 1/2 C raisins
1/2 C water 1 C ready-to-eat chickpea, drained
1/4 lb diced ham or chicken 1/4 C fresh parsley, chopped
1 small zucchini, diced 3 shallots, chopped
1 tomato, chopped 1 sweet pepper, diced
1/2 C oil 1 clove garlic, minced
3 T lemon jce 1/2 tsp ground cumin
1/4 tsp tumeric 1 1/4 tsp salt
dash hot pepper sauce (e.g. Tabasco)
Put raisins and water in a glass, let stand 15-20 min while you
prepare the salad.
Combine the ingredients for the dressing, whisk well, or shake well in
