Cous Cous Salad
Yield: 4 servings

250 g cous cous
400 ml boiling water
1 tablespoon olive oil
25 g butter
75 g green beans, cooked
2 shallots, finely diced
3 tomatoes, diced
12 black olives, chopped
110 g feta cheese, diced
2 tablespoons lemon juice

Place cous cous, boiling water and oil in a pan. Cover and allow
to stand for 5 minutes. Add the butter and heat gently for 3
minutes. Allow to cool. Separate the grains gently with a fork.

Cut the green beans into 2.5 cm lengths. Add to the cous cous
along with the remaining ingredients. Mix well and chill until
ready to serve.

Note: Other crumbly cheeses can be used instead of Feta. Try
Caerphilly, Cheshire or Lancashire.
