Cucumber Olive

Cucumber and Olive Salad
2 small cucumbers
6 Kalamata or similar large, black olives
1 tsp olive oil
1 tsp balsamic vinegar
Wash, dry, trim and thinly slice the cucumbers. Place in a salad
bowl. Pit and chop the olives. Add to the bowl. Add the oil and
vinegar. Mix well. Serve.
