Cucumber Tomato Salad

Take cucumbers (tons of them), sweet yellow onions (I grew up in Washington so we used Walla Walla's, but Vidalia's or other sweet onions will do) and tomatoes (preferably also out of the garden) and mix them all together. Proportions aren't really that important, just use common sense. Finally, add a little mayonaise (or nayonaise if you don't do eggs) to give it some moist texture and some spices of your choosing (my dad always used dill and pepper). Mix everything together, cover and leave it in the refrigerator for a couple of hours. Serve cold.
Another nice addition to this recipe is to use a little sour cream instead of mayonnaise. Another REALLY nice way of preparing these is to just add a little olive oil and some oregano. If you aren't vegan, throw in some crumbled feta cheese. If you serve this with some hearty bread, it makes a meal.
I'm a major "fresh tomato" fan, and can't recommend enough using garden tomatoes instead of the store-bought ones with this recipe.
