Marinated Cucumber Salad sliced cucumber, thinly sliced lengthwise red pepper/capsicum, sliced into strips, 1/2 amount to cucumber, optional sesame oil few pinches sesame seeds, toasted brown vinegar 1 tablespoon fresh mint, chopped White or raw sugar
Amount of cucumber depends how much you want to make.
Make a dressing by combining the sesame oil, brown vinegar and sugar, make enough to marinate all the cucumber, the dressing will be thrown out anyway. The proportion of vinegar and oil is roughly 1 cup to 1 tablespoon to 1/2 tablespoon respectively, however I found tasting it as you mix it works better.
For best result, as you taste it, you should be able to taste the vinegar with sugar before tasting sesame oil. If you taste the other way around, you've put too much sesame oil.
Then marinate the cucumber overnight. Combine with red pepper and sprinkle with mint and sesame seeds.
