Print this Recipe    Fattoush is a middle eastern bread salad that every Arabic family seems to

have a particular opinion on how it should be. I have adapted this one
from my mom's recipe. Although, she likes to add purslane, I could live
without it. In addition, being something of an acid lover I would have a
higherlemon to oil ratio in the dressing than the recipe suggests. Its
best to use bread that's a little stale so it can really soak up the

2 large pita bread s
salt and pepper
1/4 cup fresh lemon juice
1/3 cup olive oil
1/2 head romaine lettuce, torn into bite size pieces
1/2 cup parsley, coarsely chopped
4 medium green onions, sliced
1/2 cup fresh mint, coarsely chopped
1 medium cucumber, peeled and chopped into 1/2 " cubes
3 medium tomatoes, cut in 1" cubes
1/2 teaspoon sumac

For the Pita Toast
Toast pitas in 375 degree F oven until golden and crisp (15 minutes). Let
cool. Break into 1/2 " pieces.

For the Dressing
In a small bowl, mix salt and pepper (to taste) lemon juice and olive oil.

In a large salad bowl, toss lettuce, parsley, green onions, mint,
cucumber, and tomato. Sprinkle sumac and add toasted pita pieces over
salad vegetables. Pour dressing over salad and toss well.
Serve immediately.
