Fava Bean Salad 1/2 lb fresh fava beans 1/4 lb fresh peas 8 large fresh basil leaves Parmesan Regiano, shaved salt & pepper 1/2 cup good quality extra virgin olive oil 2 tsp Balsamic vinegar Remove fava beans from their pods. Set a pot with lots of water to boil. Blanch fava beans for 15 seconds in the boiling water and imurse in cold water to refresh. Drain beans when cool.
Remove the tougher outer shell of the beans and place the soft bean centres in a bowl.
Shell the peas and add to bowl. Slice basil leaves very finely and add to bowl. Drizzle olive oil over the beans and peas. Season with salt and pepper.
Shave parmesan until it is about 1/2 the bean/pea combination. Add the balsamic vinegar. Toss and chill.
Serve on a bed of mixed lettuces with a loaf of good fresh bread to dip into the oil.
