Salata (Greek salad)

GREEK-STYLE SALAD
Yield: 3 servings

3 lettuce leaves - romaine
1 md roma tomato
1/4 cup feta cheese, crumbled

1/2 tb olive oil
1/2 tb lemon juice
1/4 ts oregano
1/4 ts garlic salt
1 pn thyme
1 pn pepper
6 black olives, pitted

Tear lettuce into bite-sized pieces. Cut tomato into small chunks.
In glass bowl, combine lettuce, tomato, cheese, (cucumber slices are
nice, too), cover and chill.

DRESSING: In a cup, combine olive oil, lemon juice, spices and beat
together with a fork. Pour dressing over salad and toss gently to
coat ingredients. Slice olives and sprinkle over salad.
Light and Easy Each serving 1 milk choice, 1 extra veg (free), 1
fat and oils.




Salata (Greek Salad)
Yield: 6 servings

1 garlic clove, halved
1 lettuce head, torn into bite-sized pieces
1/2 cup celery, chopped
3 tomatoes, cut into wedges
1 sm onion (or scallion)
1/2 green pepper, sliced
6 radishes, sliced
salt
pepper
1 ts oregano
1/4 cup olive oil
3 tb vinegar
ripe olives (garnish)
anchovies (garnish)
feta cheese (garnish)

Rub wooden salad bowl with clove of garlic. Wash and prepare
vegetables, combine in bowl. Add seasonings, oil and vinegar,
toss. Add garnishes.
