Green Bean Salad

1 lb fresh Italian green beans - flat, stringless 1/4 cup brown sugar, packed 2-3 tbsp extra virgin olive oil 2 tsp cider vinegar 1 tomato, diced 1 clove garlic minced 1 small onion--or two or three green onions, diced 1/2 cup blanched, peeled, almonds pieces or sticks fresh ground black pepper salt to taste garlic salt - about 1 scant tsp
Snap ends of beans and cut into 1" pieces. Either steam until just tender--about 10 minutes or boil in lightly salted water until al dente. Drain and rinse with cool water but do not let them get cool. Drain. Add the tomato, oil and vinegar, sugar, salts and pepper, garlic and onion, and mix well. Adjust the seasonings to your taste. Mix in 1/2 of the almonds and toss to coat. Place the salad on a platter or other long dish with a lip and sprinkle with the remaining almonds. Enjoy.
You can also add avocado and cucumber if you like. This salad is good served either warm or cold. Personally, my family prefers it warm
