HEAVENLY LIME SALAD
2 small or 1 large package lime gelatin
2 cups boiling water
8-ounce package cream cheese, softened
18 large marshmallows
1/4 cup boiling water
1 1/2 cup cold water
1/2 cup whipping cream, whipped
1 #2 can crushed pineapple
1 cup chopped pecans or walnuts (optional)
Dissolve the gelatin in 2 cups boiling water in large mixing bowl.
Mash cream cheese in small bowl; add hot gelatin mixture and stir
until dissolved. Melt marshmallows in 1/4 cup boiling water in top
of double boiler and add gelatin mixture. Add 1 1/2 cups cold
water; add whipped cream and beat mixture until it is smooth. Add
pineapple and, if desired, nuts. Pour into greased mold, large
baking dish, or individual molds and chill until set.
