Leeks with Grapefruit Dressing
4 medium-sized leeks
juice of 1 grapefruit 1 Tbsp chopped chives 2 Tbsp red wine vinegar 4 Tbsp extra virgin olive oil salt pepper
1 pink grapefruit, peeled and seeded
Wash and trim the leeks, keeping only the white and light green parts and discarding the rest, including the outer two layers. In a medium-sized pot of boiling, salted water, blanch the leeks for 5-8 minutes, then refresh them in an ice-water bath. Cut the leeks lengthwise into quarters and set aside.
To make the dressing, mix the grapefruit juice, chives, vinegar, oil, salt and pepper to taste in a small mixing bowl.
Place four pieces of leek on each plate and cover with dressing. Garnish each plate with grapefruit segments.
