LIMA BEAN AND SALSA SALAD

1 1/2 cups cooked Lima beans (or any beans you choose)
1 cup chopped cucumber
2 cups Fresh Tomato Salsa

Drain beans well, and combine with cucumber and salsa.

Cover with plastic wrap and allow to stand in refrigerator for at
least 1 hour before serving. Serve on a bed of lettuce.


FRESH TOMATO SALSA

4 ripe firm tomatoes, finely chopped
1/2 cup finely chopped red (purple) onion
4 -5 spring onions (scallions), finely chopped
1/2 cup finely chopped green capsicum
1/4 cup fresh coriander, chopped
1 tblspn lime juice
1/2 cup sliced black olives.

Place tomatoes in a colander while you prepare the other vegetables,
to allow them to drain well.

Combine all ingredients in a small bowl, cover with plastic wrap
and refrigerate until required.
