Curried Macaroni Salad
250 ml mayonnaise
2 tablespoons curry powder
2 tablespoons wine vinegar
450 g macaroni or other pasta shapes
1 red pepper, diced
1 green pepper, diced
1/2 cucumber, peeled, seeded, diced
1 bunch spring onions, chopped
2 sticks celery, diced
25 g parsley, finely chopped
2/3 cup carrots, diced
8 tablespoons chutney
Combine mayonnaise, curry powder, and wine vinegar in small bowl.
Set aside. Cook macaroni in salted water until tender, drain.
Place warm macaroni in a large bowl. Pour sauce over warm macaroni
and toss well to combine. Allow macaroni to come to room temperature.
Add remaining ingredients.
