Margarita Beets
1 bunch beets (or a couple of canns)
1/2 c sugar
2T lime juice
1 t. lime zest + additional for garnish
1 serrano or other hot chile, partially seeded and sliced
1 T Tequilla (mas o menos!!)
1 t kosher salt
Fresh cilantro for garnish.
Boil and clean beets, cut in slices or strips. Set aside. In a
small pan, combine all else save the cilantro and cook over low
heat, stirring, for 2-3minutes. Pour over the beets and garnish
w/cilantro and/or zest. Serve warm or room temp or chilled.
