Marinated Vegetable Salad
1 small cauliflower 1 small bunch of broccoli 1 medium red or white onion, or about 6 green onions 3 carrots 2 stalks celery 1 bell pepper (or half of 2 different color peppers) 1/2 c snow peas 1 c cherry tomatoes, cut in halves
1-2 cloves garlic, pressed or minced 1/2 c red vinegar 1 lemon, juiced 3/4 c olive oil black pepper fresh or dried herbs 1-2 t sugar 1 T Dijon mustard cayenne pepper (optional)
To make the dressing, combine all ingredients in a lidded jar and shake well. Taste and adjust.
Cut the cauliflower and broccoli into flowerets. Cook the cauliflower, broccoli, and carrots until tender but not soft (either steam or cook in a lidded pad with a little water). Place the cooked vegetables in a serving bowl. Pour the dressing over them and set aside.
Slice the green onions or chop the regular onions. Chop the bell pepper and celery into about 1 inch pieces. Snap the snow peas in half. Add all of the raw vegetables to the bowl.
Stir to combine all. Let sit covered in the refrigerator until chilled, allowing the vegetables to marinate in the dressing.
