Marinated Mushroom Salad
1 lb (500 gm) mushrooms
1 clove garlic, crushed
1/4 tsp salt
6 T oil
4 T wine vinegar
pepper to taste
1 small onion, finely chopped
1 T chopped parsley
Wash and dry mushrooms. Leave small mushrooms whole, slice larger
ones. Combine garlic and salt, whisk in oil, then vinegar. Whisk
until mixture turns yellow. Add pepper, onion, parsley. Stir in
mushrooms, coating them evenly.
Cover, refrigerate for 1 hour minimum. Stir now and then.
