Servings: 4

15 oz Whole okra; drained
2 ts Onion; minced
1/4 ts Black pepper
1 ts Minced parsley
1 ts Lemon juice
2 Tomato; cut into eighths
Salt; to taste
Salad greens

1/2 c Salad oil
1/4 c Wine vinegar,red or white
1/4 ts Hot pepper sauce
1/4 ts Worcestershire sauce

Steam okra over boiling water 5 minutes; rinse with cold water and
drain thoroughly. Place in a bowl and sprinkle with onion, pepper,
parsley and lemon juice; chill. To serve, mix lightly, then add
tomato wedges. Spoon Oil and Vinegar Dressing over all and mix
lightly; add salt to taste. Serve on salad greens.

Dressing: Combine all ingredients and shake vigorously. Store in
refrigerator.
