Layered Orange And Onion Salad
1 C raspberry vinegar or red wine
1/2 C oil
1/2 Tsp sugar
1 Tbsp chopped fresh basil or 1/2 tsp dry
1/4 Tsp salt
1/4 Tsp pepper
1 medium head Boston lettuce, washed, patted dry
1 medium red onion, thinly sliced, rings separated
5 seedless navel oranges, peeled, sliced into 1/4-inch slices
For dressing, put all ingredients in jar with tight-fitting lid.
For salad, arrange lettuce leaves on large serving plate. Put orange
slices on lettuce leaves. Top with onion rings. Drizzle salad with
dressing. Makes 6 servings.
