Low-Fat Pasta Salad

16 ounce package Penne or macaroni
1 medium head escarole
3 Tablespoons red wine vinegar
1 Tablespoon Dijon mustard
1/3 cup fat free mayonnaise
1 teaspoon ground pepper
6 ounce package extra lean ham
6 ounce can white chicken in water
6 ounces fat free Swiss Cheese

In large nonstick saucepan, prepare pasta according to package
directions, drain and set aside. Thinly slice escarole, discarding
any tough ribs. In large bowl, combine vinegar, mustard. mayonnaise
and pepper; mix well. Add remaining ingredients and mix well. Serve
immediately or chill for 1 hour. Makes 8 servings
