Pasta Green
Serves 2 main, or 6 sides.

3 cups medium spiral pasta
2 boiled eggs
1 small bunch parsley, finely chopped
1 cup Guacamole

Gaucamole recipe:

1 avocado
1 cup sour cream
1 tablespoon lemon or lime juice
3 shakes of pepper

Cook spiral pasta and eggs thoroughly.

Meanwhile, prepare parsley, and gaucamole if necessary (just combine
the gaucamole recipe and mix thoroughly).

Eggs should be ready before pasta is cooked. Remove shell and use
a potato masher to scramble eggs.

Drain pasta. Combine all ingredients.


NOTE: The recipe is made by looking at it and balancing ingredients.
The result pasta should basically look like the pasta has been
battered with gaucamole rather than soaking in it. Parsley amount
varies depending the colour of the greenness.

Optional ingredients to add colour maybe red peppers, finely grated
carrots etc. Onions and garlic are not recommended in this recipe.
