Pasta Salad

500g cooked pasta (spiral, penne, shells etc.)
3 tomatos, wedged
1 cumcumber, medium sliced
1/2 red cappsicum, 1cm dice
1/2 green cappsicum, 1cm dice
small bunch parsley, finely chopped
extra light olive oil
salt/pepper (optional)
fresh basil, chopped (optional)

Cook pasta well. Meanwhile cut vegetables. Cool pasta and mix
all dry and wet ingredients. Olive oil amount varies depending on
taste. You can add salt/pe pper and/or fresh basil to taste.

Tip: Remove the wet seeds in the tomatoes to
keep the pasta less soggy.
