Green Pea Salad
Yield: 8 Servings
32 ounces green peas, rinsed and drained
1 cup Cheddar cheese, 4 ounces, finely diced
1 cup celery, diced
1/2 cup sweet pickles, thinly sliced
1/2 cup red bell pepper or pimento diced
1/2 cup mayonnaise
freshly ground black pepper to taste
Combine peas, cheese, celery, pickles, bell pepper, mayonnaise,
salt and pepper in medium-size bowl. Toss lightly to coat evenly.
Cover and refrigerate at least 2 hours.
