Pea Salad
2 cans small, early peas, drained 1/4 cup (1/2 medium) chopped onion, to taste 1/4 cup (1/2 medium) chopped bell pepper, any color 1/4 cup cheese, any kind, diced or grated 1/2 pound bacon, pepper bacon preferred, fried crisp and crumbled enough mayonnaise to moisten sugar (1/8 to 1/4 teaspoon) to taste salt to taste
Mix peas, onion, bell pepper, cheese and bacon together. Add mayo by the Tablespoon until mixture is moistened and starts to stick together. Add sugar and salt to taste. The amount on the onion, pepper, cheese, and bacon are minimums. Adjust to taste.
Notes: This is even better made with fresh, just barely steamed peas. Red/yellow peppers are pretty in it, as is red onion, though I think I prefer sweet onion (vidalias or 10/15) tastewise. Cheddar, colby, jack, even Velveeta, are all good in it, as are combinations of cheeses. And use a mayo you like. Personally, I like a homemade one; however I have even heard (but thankfully cannot confirm) that certain members of the family make this salad with Miracle Whip.
