ENGLISH PEA SALAD

1 1/2 pounds fresh English peas (1 1/2 cups shelled)
1 cup (4 ounces) sharp Cheddar cheese, cut into cubes
1/2 cup chopped onion
2 hard-cooked eggs, chopped
1 (4-ounce) jar diced pimiento, drained
6 small gherkins, chopped
3 tablespoons mayonaise
1/4 teaspoon prepared mustard
1/8 teaspoon pepper
tomato slices

Shell and wash peas; cover with water in a medium saucepan. Bring
to a boil; cover, reduce heat, and simmer 8 to 12 minutes or until
tender. Drain.

Combine peas and next 8 ingredients; mix well. Chill. Serve with
tomato slices. Yield: 6 servings.
