PEAR-CHEESE SALAD
Peel and core whole ripe but firm pears. Do not cut up pears.
Sprinkle with lemon juice to prevent darkening. Stuff cavities
with either cottage or cream cheese, Liederkranz, Brie, Camembert,
or blue cheese. Sprinkle pears with paprika, or roll in very finely
chopped nuts. Chill until serving time. Slice and serve on salad
greens with French dressing made with lemon juice.
