FRESH-PEAR CACTUS SALAD
6 firm ripe Bartlett pears 1 cup sugar 2 cups water 1 tablespoon fresh lemon juice 2 cinnamon sticks 1/2 teaspoon whole cloves Shelled roasted peanuts Lettuce Mayonnaise
Wash and pare pears. Cut into halves lengthwise and core. Mix sugar, water, and lemon juice in a saucepan. Add cinnamon and cloves. Bring to boiling point. Add pears, a layer at a time. Cover and cook for 20 minutes, or until pears are tender. Do not overcook. Remove pears from syrup, drain, cool, and chill. Stick each pear with shelled peanut halves until covered. Arrange on lettuce. Serve with mayonnaise mixed with some of the pear syrup. Makes 6 servings.
