Print this Recipe    Potato Salade Nicoise

2 lbs green beans, cooked tender crisp
2 lbs fingerling (or other mini) potatoes, split lengthwise and boiled
6 - 8 hard cooked eggs sliced in quarters
small jar capers
can pitted black olives

While potatoes are still warm, combine everything in a large bowl
except eggs. Pour vinaigrette over all (recipe follows) and toss
well. Garnish with egg sections and serve.


Vinaigrette

150 ml red wine vinegar
300 ml extra virgin olive oil
10 ml salt
10 ml black pepper
20 ml dry mustard
2 cloves garlic crushed

Place in a jar with a screw top and shake well.

This will make about twice as much as you need for the salad. Save
it for next time or use with spinach or your favourite greens for
a change of pace.
