Cabbage Salad (Salada de Salmagundi)
1 package unflavored gelatin 1/4 cup water 1 1/2 cups tomato juice 1 bay leaf 1 whole clove 3 peppercorns 1/4 cup sugar 1/2 teaspoon salt 1/4 cup vinegar 1 teaspoon onion juice 1/2 cup shredded cabbage 1 cup finely chopped celery 1 canned pimiento, cut into strips 2 tablespoons chopped red or green pepper
Sprinkle the gelatin over the water to soften.
Place the tomato juice, bay leaf, clove and peppercorns in a saucepan and bring to a boil. Lower the heat and simmer 5 minutes. Strain the liquid into a bowl.
Add the softened gelatin, sugar and salt and stir until dissolved. Stir in the vinegar and onion juice and let the mixture cool. When it begins to thicken, fold in the cabbage, celery, pimiento and green peppe. Place the salad in a mold which has been rinsed with coldwater. Refrigerate 2 to 3 hours until set. Unmold on a serving plate.
