Smoked Turkey Salad
1 Texas Ruby Red grapefruit
3 tablespoons balsamic vinegar
1 teaspoon minced fresh basil
1 teaspoon minced fresh marjoram
salt and pepper
1/2 cup olive oil
4 cups assorted lettuce (Bibb, arugula, watercress), torn into pieces
1 pound smoked turkey, cut into thin slices
1 avocado, peeled and sliced
toasted pine nuts
Peel and segment grapefruit. Set aside.
Mix vinegar, basil, marjoram, salt and pepper in small bowl. Whisk
in oil in thin stream. Toss greens in large bowl with some of the
dressing. Arrange grapefruit, chicken and avocado on lettuce.
Drizzle lightly with more dressing; sprinkle with pine nuts.
