Spinach Avocado

Spinach-Avocado-Orange Toss
1/2 teaspoon grated orange peel
1/4 cup orange juice
1/2 cup oil
2 tablespoons sugar
2 tablespoons wine vinegar
1 tablespoon lemon juice
6 cups spinach or other greens, torn into bite-sized pieces
1 small cucumber, thinly sliced
1 avocado, peeled and sliced
11-ounce can mandarin oranges, drained
2 tablespoons sliced green onions
Combine first 6 ingredients in a jar. Cover tightly and shake
until thoroughly blended, Mix remaining ingredients in a bowl and
pour the dressing over all. Toss lightly.
Yield: 10 servings.
