Spinach Gouda Salad

4 slices bacon
1 cup grated gouda cheese
4 cups torn spinach
8 mushrooms, thinly sliced
1 cup thinly sliced green onion
1/4 cup vegetable oil
2 tablespoons fresh-squeezed lemon juice
1 clove garlic, chopped fine
1/2 teaspoon salt
1/4 teaspoon dry mustard
Pinch cracked black pepper

Crisply cook bacon and drain. Crumble bacon and toss with grated
cheese in small bowl. Reserve.

Place spinach in a large salad bowl; top with mushrooms, green
onion, and bacon-cheese mixture.

Combine oil, lemon juice, garlic,salt, mustard and pepper in a
small jar with a tight fitting lid. Shake well.

Pour over salad and toss well.

Note: I like extra bacon and mushrooms, and I leave out the green
onions. The amounts of the dressing ingredients should be kept
exact, though.
