Spinach Salad

3 packages frozen chopped spinach thawed and squeezed dry
3/4 - 1 cup mayo (not salad dressing)
3 ribs celery sliced
3 hard boiled eggs diced
3 oz colby or mild cheddar diced finely
1-2 tsp dry mustard

Three hours ahead, mix mustard and mayo together and set in fridge.
Mix all remaining ingredients well. Add in mayo mix and incorporate
thoroughly. Chill.

Note: This can be very spicey depending on the amount of dry
mustard you use. The heat intensifies after it sets awhile which
is why you want to wait before combining so you can adjust this by
adding a little more mustard to the mayo (and waiting a while longer
to test) or adding more mayo to diffuse the heat.
