Squid Salad
3 lbs cleaned squid
5-6 cloves garlic
1/4 C lime juice
1/4 C fish sauce
1 large thinly sliced onion
1 handful fresh cilantro, roughly chopped
1 handful fresh mint, roughly chopped
5-6 thai peppers, thinly sliced
freshly ground black pepper
Slice the squid bodies into rings. Just leave the tentacles whole.
Bring a large pot of water to a rolling boil and drop the squid into it.
When the water returns to a boil, drain the squid. Meanwhile, in a large bowl mix all remaining ingredients. Add the squid and refrigerate a couple of hours. The longer this stuff sits, the better it gets.
If there's not enough liquid for your taste, just add more lime juice and fish sauce in equal parts.
I have substituted red pepper flakes for the thai peppers when I get a
craving for this and don't feel like running to the market.
Notes: It makes your breath *terrible*!
