Here's a great summertime recipe:

Steak & Vidalia Onion Salad

1 lb. flank steak
1 1/4 tsp. salt
1/4 tsp. ground black pepper
4 C. leaf lettuce torn in bite-size pieces
1 med. Vidalia onion, thinly sliced (about 2 cups)
2 C. thinly sliced peeled cucumber
1 C. sliced sweet red pepper
1/4 C. olive oil
3 T. lime juice
1/4 C. chopped fresh dill

(Can also be done on the grill.) Preheat broiler. Season steak with
1/4 tsp. salt and 1/8 tsp. ground black pepper. Broil 1-2 inches from
heat until desired doneness (3 to 4 minutes per side for medium-rare).
Cut into thin slices and cool. Place in a large salad bowl with
lettuce, onion, cucumber and red pepper. Set aside. In a cup,
combine olive oil, lime juice and remaining 1 tsp. salt and 1/8 tsp.
black pepper; pour over salad; serve immediately. (4-6 portions)
