WALDORF SALAD

2 cups diced apples, unpeeled
1 tablespoon sugar
2 tablespoons lemon juice
1 cup chopped celery
1/2 cup raisins
1/4 cup chopped pecans or walnuts, preferably toasted (optional)
1/2 cup Cottage Cheese Dressing (recipe follows)

Combine.

Fruited Waldorf Salad: Follow recipe for Waldorf Salad and stir
in one cup of seedless grapes before adding dressing. Or add 1
cup pineapple tidbits. You may also use mayonnaise or salad dressing
instead of Cottage Cheese Dressing.


Cottage Cheese Dressing:

1 cup 1% lowfat cottage cheese
1/2 cup reduced-fat, cholesterol-free mayonnaise
1/2 cup nonfat plain yogurt
1/4 cup lemon juice

In a medium bowl, beat cottage cheese until smooth. Add mayonnaise
and yogurt and beat until well blended. Add lemon juice and beat
again. Cover and store in refrigerator. Use in place of mayonnaise
when mixing potato, pasta, or meat salads.

Note: To toast nuts, spread in a shallow baking pan in a single
layer; bake at 350 degrees F for 5 to 10 minutes until light golden
brown. To prevent burning, watch carefully and stir once or twice.
