Cilantro-Lime Salsa
1 small onion, finely chopped 1 cup chopped fresh cilantro 1/2 cup chopped parsley 1/2 cup salad oil 6 tablespoons lime juice 3 tablespoons distilled white vinegar 2 cloves garlic, minced 1 jalapeno pepper, minced
Mix onion, cilantro, parsley, oil, lime juice, vinegar, garlic, and jalapeno in a nonmetallic bowl. If made ahead, cover and refrigerate until the next day. Makes about 2 1/2 cups.
