Black Bean/Corn Salsa
2 cans hunt's diced tomatoes (drained)
2 cans black beans (drained)
1 can yellow corn
1 large bermuda (purple) onion diced
1 bunch cilantro chopped (not stems)
juice of 1 lime
1 shot tequila (optional)
1 jalapeno sliced thin
dash kosher salt
Drain beans, corn, tomatoes. Combine all ingredients and let sit
over night. Gets better with time.
