Black Bean and Corn Salsa 1 15 oz can of black beans kernels from 3 ears of fresh corn 2 medium sized tomatoes 1/2 cup finely diced red onion 2 jalapeno peppers, seeded and sliced into fine slivers 2 tablespoons chopped cilantro 2 tablespoons lime juice 1/4 cup olive oil Salt to taste
Roast corn kernels on a gas grill or, broil them for about 5 minutes. Combine all ingredients. Serve chilled.
