Black Bean and Corn Salsa 15 oz. can black beans (rinsed and drained) 1 cup frozen corn kernels (thawed) 1/2 cup chopped red bell pepper 1/2 cup chopped fresh cilantro 3 Tbsp lime juice 8 thin green onions, chopped 2 Tbsp balsamic vinegar 1/2 tsp. salt 1/2 tsp. ground cumin
1 small green chili, chopped, optional Mix all the above well. Refrigerate over night to let flavors blend. Makes 5 cups.
