Corn Salsa
2 cups frozen corn, thawed 1/2 cup chopped red bell pepper 1 small onion, diced 1 jalapeno pepper, seeded and chopped 1 Tbsp chopped fresh cilantro 2 Tbsp lime juice 1 Tbsp oil 1/2 tsp. oil
In med. bowl combine all ingredients. Mix well. Cover and refrigerate 1 hr. or till well chilled. Serve over grilled meats, poultry or fish,
