Habanero Salsa

15 fresh habaneros
1 1/2 onions, quartered
2 fresh medium tomatoes
8 cloves garlic
1 Tbsp red pepper flakes
1 1/2 cup water
3 tsp salt
1 Tbsp white vinegar

Place whole tomatoes in deep pot. Surround tomatoes w/ haba%F1eros,
onions, garlic, pepper flakes, and salt. Add water. Simmer on
Medium for 15 minutes, then turn down to low and simmer for 3 hours.

Check occasionally, and poke with fork to test tenderness. Do not
stir. After 3 hours it should be very tender, remove from heat.
Very carefully drain most of the water (juice) into a bowl. Set
aside.

Put contents of pot into blender and add vinegar. Puree for 15-30
seconds. If mixture is too thick, add some saved juice and puree
again. Put into bowl or jar and let stand in room tempature for
2 hours. Refrigerate. Serve chilled with tortilla chips, or any
Mexican meal.
