Pear Salsa
Yield: 5 cups

2 tablespoons vegetable oil
1 onion, chopped
1 green pepper, chopped fine
1 lg garlic clove, chopped fine
2 tablespoons finely chopped parsley
1 tablespoons lemon juice
1/2 ts salt
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
1/2 teaspoon Tabasco sauce
2 tomatoes, seeded and chopped coarse
2 to 3 pears, peeled and chopped

Heat oil in medium skillet. Saute onion until tender, about 3 to 4
minutes. Add green pepper, garlic, parsley, lemon juice, salt,
oregano, basil and Tabasco sauce, cook 2 minutes. Remove skillet
from heat and stir in tomatoes and pears. Cover and refrigerate.

Make 5 cups.
