Pico de Gallo
1 bunch fresh cilantro, chopped
2-3 tomatoes, peeled, seeded and chopped
1 medium red onion, chopped fine
3-4 heads garlic, minced (optional)
2-3 small jalapenos, seeded and chopped (or leave the seeds in for heat)
1 teaspoon white vinegar
juice of 1 lime
Mix everything together and chill for a least an hour for the
flavors to blend.
For a quick and easy dip, mix with one container of fat-free sour
cream and serve with tostada chips, and margaritas!
