Salsa

1 large onion
2 green peppers, chopped
3-4 garlic cloves, minced
3-4 fresh jalapeno peppers, chopped (remove seeds from all but one)
28 oz. can tomatoes, chopped
14 oz. can tomato sauce
1 tsp. oregano
1-2 tsp. cumin
1 tsp olive oil
1 tbsp red wine vinegar
1/2 tsp. freshly ground pepper
1 tsp.salt
2 dashes cayenne pepper

Chop each of the vegetables, by hand or food processor, to desired
size. Combine all ingredients in medium-sized saucepan and bring
to boil. Reduce heat and simmer for 30 minutes. Pour into jars
and store in refrigerator. this can be served with absolutely
everything. Makes 8 cups.
