Fresh Salsa

1 tbls. fresh pressed or minced garlic
1/2 cup chopped, cilantro
1/2 - 1 jalapeno
1/4 cup chopped red onion
4 medium ripe fresh tomatoes
1 tbls. olive oil (optional)
1 tsp. red wine vinegar (optional)
balsamic vinegar (optional)
salt and pepper to taste

Chop everything up really fine and then combine it all in a bowl
with the oil and vinegar.

Variation: Add roasted poblano peppers or chilies and tomatillos
and if corn is in season, roast the corn first and then add the
shucked kernals to the salsa.
