Creamed Mushrooms on Toast

60g butter
1 small onion, finely chopped
2 tsp curry paste
juice of 1 lemon
375g button mushrooms, sliced
4 tsp cornflour
1 cup cream
salt and pepper
4 rashers grilled bacon
4 slices wholemeal bread, toasted, buttered
chopped parsley to garnish

Melt the butter in a frying pan, add the onion and curry paste and
fry gently until soft. Add the lemon juice and mushrooms and fry
gently for 3 minutes.

Stir in the cornflour and cook, stirring, for 2 minutes. Gradually
add the cream and cook gently, without boiling, until thickened.
Add salt and pepper to taste.

Divide the mixture among the hot toast slices. Garnish with grilled
bacon and parsley and serve immediately.
