Garlic Mushrooms

GARLIC MUSHROOMS 450g button mushrooms, slice if large 3 Tbsp olive oil 3 Tbsp water 2 Tbsp dry sherry (opt) 3 cloves garlic, crushed 115g soft cheese 2 Tbsp chopped parsley Salt and ground black pepper Put the mushrooms in a saucepan with the olive oil, water and sherry, if using. Heat until bubbling, then cover with a tight-fitting lid and simmer gently for about 5 minutes. Add the crushed garlic and stir well to mix. Cook a further 2 minutes. Remove the mushrooms with a slotted spoon and set aside. Cook the liquor until it reduces down to about 2 Tbsp. Remove from the heat and stir in the soft cheese and parsley. Stir the mixture well until all the cheese has completely melted. Return the mushrooms to the pan stir gently until they are coated with the cheese mixture. Season with salt and pepper. Serve on hot toast.
