1-2 slices of white bread per person. sliced chicken or turkey 2 slices of broiled bacon per slice of bread thick cheese sauce
Preheat oven to 500 degrees F. Toast bread on one side only, and place in oven-proof individual serving dishes. Spread sliced chicken or turkey on bread, top with 2 slices of bacon. Pour cheese sauce over all. Place in oven just long enough to bubble sauce. Top with paprika for garnish and serve immediately.
THICK CHEESE SAUCE
3 tablespoons butter 3 tablespoons flour 1/2 c. grated sharp cheddar cheese 1 c. milk salt and cayenne pepper to taste
Melt butter in saucepan or double boiler. Add flour and blend well. Add cheese and beat until smooth. Slowly add milk, stirring constantly. Cook til sauce is thick and smooth (about 4 minutes). Add salt and cayenne.
The sauce is basically just a Mornay sauce. I have also had these with a slice of tomato atop the bacon. A Kentucky staple, with many individual variations possible.
