NYC Onion Relish
Peel and slice large sweet Vidalia onion. Saute in 2 Tbsp butter.
Sprinkle liberally with paprika.
When onions get limp and almost clear, add 1/4 cup water. After
giant cloud of steam dissipates, sprinkle on 2 tsp sugar. Simmer
long enough for mixture to caramelize, and serve hot right away.
