Monte Cristo 2 slices white or egg sliced bread, 1/2" thick 1.5 oz. turkey, sliced 1.5 oz. ham, sliced 1 oz. Swiss cheese (one slice) 1.5 oz. blackberry preserves 3 cups canola Oil 3 2/3 cups water 1 egg 3 1/2 cups flour 2 tsp. baking powder 1 1/2 tsp. salt 3 drops yellow food coloring Mix egg and water in a mixing bowl, using a wire whip. Add all dry ingredients and scrape the bowl to ensure that the batter is mixed thoroughly. Add food coloring and continue to mix for 20 minutes until smooth (coloring may be omitted if desired). On a slice of bread, arrange: Turkey, Ham, and cheese, covering all of the slices evenly. Place the second slice on top and cut in half diagonally. In a 10" pan, heat oil to 350 degrees. Dip one half of the sandwich in batter, allowing excess to drain, and very carefully place in the oil. Repeat the same for the other half of sandwich. Cook them for six minutes on one side. Turn over and cook for four minutes on the other side. Place each sandwich on a paper towel, on a plate, in a warm oven to hold until all four are complete. Serve with Blackberry preserves and sprinkle sandwich with powdered sugar.
